Custom form variables in custom Email template

The help bubble in the custom forms template indicates that custom variables are available for use in pages or emails.

How can I call these custom variables, which come from custom lists, for use in an email template? %{ticket.varCustomVariable} isn't working for me.

Your example of : %{ticket.email.varCustom} returns the user email address, Not the custom variable.

My quick research leads me to believe that custom variables are only usable if they are in the default form templates (ticket, contact etc), using the format %{ticket.varCustomVariable}.
Custom variables contained in custom forms, are Not available for use in email or page templates.
