Is there a way to edit and add different asset types, I cant seem to find the option

You cannot delete the default Asset, only those that you added can be configured (Asset name;Global Rates).
Moreover, to add different asset type please go to Comodo One > Service Desk > Manage > Assets > Add New Asset
