Is it possible to disable updates completely through a profile? We have a group of machines that mustn’t receive updates at all until they are done by hand.
I can only see varieties of enabled-scheduling in the patching options.

If you are talking about patch updates, they are not going to be applied to devices automatically if you don’t schedule the patch procedure under the device profile.
You can deploy these patches any time (on demand) by running the relevant procedure over devices or by selecting relevant patches from patch inventory to install on missing devices.
